Apple Cinnamon Roses

Let me just preface things by saying I am not a big fan of baking. Lauren is a much better baker then me but she is currently on a 10 day silent meditation retreat so I was on my own for this one (hence why they aren’t the prettiest 😉 ) . I wanted to make something new but wasn’t sure what until I went onto facebook and saw a video someone posted about apple rose rolls but I didn’t like their ingredients and use of the microwave. I was then inspired to try to create something similar but healthier! You can make this for a special breakfast for someone or for dessert.

This recipe is both gluten free and paleo!

The crust recipe can be used in order to make normal cinnamon type buns if you would like or would also work pretty well as a pie crust.

My advice for this recipe is be patient when rolling the crust around the apples and pecans, try to seal any cracks that form with your fingers. In the end though it is worth it, I just ate 2 while writing this! (One benefit of Lauren being away, I get double!)

Ingredients: (makes 5-6)

Crust (Dry ingredients)
1 cup Almond flour
2 tbsp Tapioca flour
2 tbsp Coconut flour
1/8 tsp Baking soda
1/2 tsp Cinnamon
Pinch of Salt
Crust (Wet ingredients) 
1 Egg (room temperature)
2 tbsp Coconut oil
1 tbsp Maple syrup
3 Dates (pitted)
1 tbsp Hot water
2 tbsp Coconut oil
1 tbsp Maple Syrup
1 tbsp Cinnamon
2 Apples
Crushed pecans


1. Place the pitted dates in a small bowl with the tbsp of hot water to soak and soften
2. Measure out the Crust dry ingredients and mix them in a bowl
3. Measure out the Crust wet ingredients, make sure the coconut oil is melted and mix them in a separate bowl

4. Mix the Crust wet and dry ingredients together until it makes a dough, place in the fridge for 15 minutes while you prepare the filling
5. Heat up a small pot of water, you will only need a couple inches of water.
5. While the water heats. Add the soaked dates with the water into a food processor or high powered blender, with the Coconut oil, Maple Syrup and Cinnamon. Mix until it makes a paste. Set to the side
6. Core your apples and cut the apples into thin slices like below (leave the skin on) and add to the boiling water for 2 minutes. After the 2 minutes strain and set to the side.
7. Turn your oven onto Bake 375F
8. Take your crust dough out of the fridge and place on a piece of parchment paper, place a piece of parchment paper on top and roll out into a square. You will want it to be about 1/2 cm in thickness.
9. Drizzle the filling on top of the dough and spread across using a food brush or the back of spoon.
10. Cut the dough into strips about 2 inches in width
11. Take out muffin tins and grease the inside with coconut oil
12. Place apples on which ever strip you are working on with a small gap between them. Place a piece of crushed pecan between each apple piece. Carefully start rolling the strip, seal any cracks if possible.DSC0974613. Place the rolled ‘rose’ into the greased muffin tin. Repeat for the rest of the strips.
14. Bake for 25 minutes.
15. Sprinkle extra cinnamon on top for aesthetics. Now time to eat and enjoy!
