Chickpea Almond Chocolate Chip Cookies

Cookies! They take me back to my childhood. I remember the smell of my mom’s homemade cookies and eagerly awaiting them to come out of the oven. There may be nothing better then a warm gooey delicious fresh cookie.

It has been a while since I have had a good cookie. Since conventional cookies (especially store bought) are filled with sugar, preservatives and no nutrients, we avoid them. That is why we are so happy to have another healthier delicious treat option!

This recipe uses chickpeas, you can use canned if you would like or a better option is to buy dried chickpeas. You then soak them for 24 hours rinsing and changing the water a couple times during that period. Then place them with new water into a pot with a couple of inches of water above. Bring the water to a boil and cook for about 90 minutes until soft.

Ingredients:

1.5 cups of Chickpeas
1/2 cup of Almond Butter
1/4 cup of Maple Syrup
1/4 tsp of Baking Powder
1/8 tsp of Sea Salt
1/2 of a Organic Dark Chocolate bar (we used the brand Green & Black’s 85% dark)
1/4 cup of Almond slices

Instructions:

1. Take out your food processor and heat oven to Bake 325F
2. Measure out the Chickpeas, Almond Butter, Maple Syrup, Baking powder and Sea Salt. Add them all to the food processor
2. Mix until it has become smooth
3. Take out the Dark Chocolate and chop into pieces about the size of chocolate chips
4. Stir in the Dark Chocolate pieces and the 1/4 cup of Almond slices until they are distributed
5. Put a piece of parchment paper on a baking sheet
6. Using wet hands and a spoon make small cookies and place on the baking sheet. You should be able to make about 15-20
7. Bake for 20 minutes
8. Take out and let cool for 5-10 mins then enjoy!
