Chocolate Chia Seed Pudding

Chia seeds are a very healthy seed to integrate into your fueling. They are high in omega-3 and fiber, two things that are in short supply in many individuals fueling strategy. When soaked in a liquid they gel which creates a pudding like consistency and can be used to make a healthy easy and delicious ‘pudding’. This recipe is very easy and something you can do at night to have for breakfast the next day. This recipe makes two portions, it is something you could split with someone for breakfast. Lauren and I like to split this with some fresh raspberries and some buckwheat granola on top, yum!


1 Banana
1/4 cup Coconut Milk
3/4 cup Water
2 tbsp Cacao Powder
1 tbsp Almond Butter
6 tbsp Chia Seeds
Pinch of Salt


1. Put the Banana, Coconut Milk, Water, Cacao Powder, Almond Butter and a pinch of salt into a blender of food processor. Blend until smooth.
2. Pour mixture into a mason jar or cup. Add in the Chia seeds and mix with a spoon.
3. Place into the fridge for at least 4 hours up to 12 hours.
4. Enjoy!
