Jalapeño Wings

Tomorrow is the superbowl that mean people all over north america will be eating lots of unhealthy foods so we decided to come up with a healthier option! These homemade wings are baked not deep fried so you don’t end up with poor quality oils all over your tasty wings.

I have some very fond memories of watching the superbowl with friends over the year. My top of the mountain favourite superbowl was in 2009 when I got to watch my team, the Saints win it all. Growing up a Toronto sports fan and only being 3 and 4 when the Jays won in 92 & 93 meant that this was extra special. I am very happy to see Toronto sport teams finally on the rise again!

The sauce for our Sweet Garlic Ginger Chicken is also amazing for wings so keep that in mind if you want to try something new.

2 lbs of Organic chicken wings
4 Jalapenos
1 Red pepper
2 tbsp of White vinegar
1/4 cup Coconut oil
1/8 tsp Sea Salt

1. Heat your oven to Bake 350F
2. Cut your jalapeños in half and remove the seeds (leave some to make spicier). Cut the red pepper into chunks. Place both in a baking dish and toss with coconut oil. Bake for 30 minutes
3. Take out a wire rack and place on top of a baking sheet. Brush with coconut oil and place wings on the wire rack with a little space in between. Salt and pepper the wings.
4. Bake for 30 minutes. While they are baking prepare the sauce.
5. Place the roasted red pepper and jalapeños into the food processor with 1/4 cup melted coconut oil, 2 tbsp of white vinegar, 1 clove of garlic, 1/8 tsp of sea salt. Blend until smooth
6. Once the wings have cooked for 30 minutes toss them into a bowl with the sauce until they are fully covered.
7. Turn the oven down to Bake 250F and cook the sauced up wings for 15 more minutes.
8. Once they are done the 15 minutes pour any extra sauce on top of the wings and enjoy!
